Goat Pulao

Goat Pulao is a weekend tradition at Chaman Restaurant and one of the most anticipated dishes we serve — tender pieces of bone-in Halal goat slow-cooked with whole spices including cloves, cardamom, cinnamon and bay leaves, then layered with long-grain basmati rice and steamed together until the rice absorbs every drop of the fragrant, rich meat broth.

The result is a pulao of extraordinary depth — the rice light and separate yet infused with the full flavour of the goat and the aromatic whole spices. It is a celebration dish, a Sunday meal, a reason to visit us at the weekend when it is freshly made and available only while it lasts.
