Shami Kabab is one of the most beloved starters in Pakistani cuisine, a smooth, velvety patty made from finely minced halal chicken slow-cooked with chana dal, whole spices and aromatics until everything is tender, then ground into a silky mixture, shaped by hand and pan-fried to a deep, golden crust. At Chaman Restaurant, our Shami Kababs are rich and warmly spiced with a texture that is unlike anything else, firm on the outside, almost meltingly soft within.
